The Chef'sCombi was designed specifically to address the staffing and training pressures our customers face. Features like Chef’sGuide, a built-in cooking assistant, and a simple scroll and swipe operating system mean the machine delivers consistent results regardless of who is operating it on any given shift. That matters in healthcare kitchens, where rota gaps and agency staff are common and food quality must be maintained.
The High Speed Steamer solves a different problem: getting nutritious food onto the plate quickly without compromising on appearance or taste. It uses dry steam under pressure to cook food in a fraction of the time traditional methods take, while adjusting cook time by mere seconds lets chefs achieve different consistencies from the same base ingredients. That flexibility is particularly valuable for catering to individual dietary requirements, a challenge healthcare kitchens face daily and one that's much harder to manage with less adaptable equipment.

Our Customer Back Innovation programme sits behind everything we design. For over two decades, our teams have worked hand in hand with chefs and operators to understand their daily workflows, pain points and ambitions, and those insights shape our entire research and development process. It's an exacting process, often taking five to ten years from beginning to end, but it means every new machine adds genuine value in the kitchen.
The Chef'sCombi is our clearest recent example of innovation in action. It strips away unnecessary functionality to concentrate on what really matters to working kitchens: quality and consistency of cook, speed of operating system and ease of maintenance. Developed by chefs for chefs, and inspired by the everyday requirements of modern kitchens, it's a direct result of our Customer Back Innovation process. We spoke to chefs across multiple sectors, including healthcare, about what they needed most from a combi oven, and the answer was consistent: less complexity, less food waste, lower energy use and food that comes out right every time.
Simplicity became one of our key design pillars as a result. The Chef'sCombi's intuitive and responsive operating system adapts to a kitchen's needs, while advanced climate management delivers outstanding cooking results every time, automatically adjusting humidity based on set temperature to provide optimum flavour and texture. Guided automatic cooking, powered by Chef'sGuide, ensures consistently delicious dishes no matter who's at the controls, and mixed loads are made simple thanks to MenuMix, which monitors different food items to the second even when cooked together. Automatic cleaning that's safe, fast and effective completes a machine built to remove the guesswork that used to come with combi cooking, exactly what busy, understaffed kitchens need.

Future Direction

Looking ahead, our new MaestroFlex range, pre-launched at Host Milano will be fully available in the UK later this year. This multifunctional, robust and reliable cooking innovation combines high performance with unbelievable precision, meaning chefs can focus on what matters most. State-of-the-art heating technologies and durable materials deliver consistent cooking results even at full capacity, while full 304 stainless steel construction and welded panels throughout make it built for the toughest environments, whether a Michelin starred restaurant through to hospital canteens.
It's just as simple to use. For healthcare catering specifically, that same simplicity means any member of the team can operate MaestroFlex with confidence. Hobart's GlobalOS interface, which gives every user clear icon-based navigation and quick-start modes for peak service, along with integrated Chef'sGuide cooking prompts that let kitchen staff input product type, weight and desired browning and leave the machine to adjust temperature and timing automatically. It's smartly connected too: Hobart's SmartConnect interface lets chefs monitor energy consumption and device usage in real time, from a single smartphone screen.
